Hen of the Woods, also commonly known as Maitake, is an early fall mushroom commonly found growing around the base of Oak and maple trees. This tasty mushroom grows in massive tight clumps. Some clumps can grow to be larger than 30 pounds! These monster mushrooms have a strong savory, earthy flavor with a peppery finish. Hen of the Woods is a very finicky mushroom to grow as it absorbs the flavor of its environment, especially its substrate. Due to this quality, cultivated maitake will always have less favor than these growing wild on the base of trees.
